Skinless and boneless chicken thighs cook quicker and have lots of flavour. However, the cooking time will increase if you use bone-in thighs.
By the way, and this has nothing to do with the prices of eggs!
Way back in 2014, I spent a day behind the scenes at KFC 😉 which was very interesting.
Ingredients
- 600 g skinless and boneless chicken thighs
- spray oil (top tip see below)
- 80 g plain flour (all-purpose)
KFC 11 herbs and spices
- ½ teaspoon English mustard powder
- ½ teaspoon ground ginger
- ½ teaspoon salt
- ½ teaspoon celery salt
- ½ teaspoon garlic powder
- 1 teaspoon black pepper
- 1 ½ teaspoons white pepper
- 1 tablespoon sweet paprika
- 1 teaspoon oregano
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
Top Tips
Low-calorie cooking sprays can contain lecithin, leaving a sticky residue on cookware, potentially damaging non-stick coatings and making them less effective. Over time, they will completely ruin your non-stick cookware. 😱
Equipment
To check that food is cooked you really need a digital instant-read kitchen thermometer is handy all year round for cooking any meat, fish or poultry.
I use the Thermapen. Yes, it's a bit expensive but for good reasons. The Thermapen is used by top chefs. 😉
That said, you will need a thermometer to ensure your chicken is cooked and to make sure you don't overcook it!
You're looking for an internal temperature of 74°C (165°F). The exact time varies depending on the size of the chicken thighs and your air fryer model.
Remember that the chicken will continue to cook, so don't go over the temperature.
Once cooked, remove the chicken, cover loosely with kitchen foil and leave to rest for 5 minutes (important for extra juicy chicken)! 😉
Plus, a pair of silicone tongs are always handy to have.
Let's cook!
Mix the flour, herbs and spices in a bowl.
Coat each piece of chicken and spray both sides generously with oil.
Add the chicken (as you are airfrying, there's no need to turn it during cooking). Air fry for 12 minutes and then check the internal temperature with a digital kitchen thermometer.
Continue cooking until it reaches an internal temperature of 74°C (165°F).
The exact time varies depending on the size of the chicken thighs and your air fryer model. Mine took 15 minutes.
Once cooked, remove the chicken, cover loosely with kitchen foil, and leave to rest for 5 minutes; that's important for extra juicy chicken.

Air Fryer KFC Chicken
KFC-style chicken without buttermilk or egg.
Ingredients

- spray oil

- ½ teaspoon English mustard powder

- Remove the chicken from the fridge 15 minutes before cooking and preheat your air fryer; some models don't need to preheat.

Notes
Be sure the chicken is fully cooked using a digital thermometer.
Each air fryer is different and you may need to adjust the cooking time slightly.
If you don't have cooking spray oil you can wipe the bottom of the basket with oil from a bottle using kitchen paper.
