Potatoes and Bacon Recipe

Why you will love this!

Potatoes:

Everyone likes potatoes. This is a great way to use up any leftover potatoes.

Bacon:

Seriously, who doesn't love bacon?!

Spinach:

Okay, I know some aren't keen, but honestly, if you add it just to wilt, rather than steaming it, it's actually quite GOOD stuff. 😋

Plus it's really good for you - meaning you can eat bacon without worrying about the calories - right? 😀

Best known for being high in iron, which is key for the healthy function of red blood cells, helping support energy production.

But aside from iron, spinach is rich in many nutrients, including vitamin A, vitamin C, vitamin K, folate, and potassium.

Did you know, spinach also adds some protein to your diet?

Apparently, every 100 grams of spinach contains nearly 2.9 grams of protein, 💪 

Fried egg:

Free range of course - please.

Having rescued a couple of ex-battery hens, let me tell you they are a very sorry sight to see. Poor baby chickens.

Plus a nice golden yolk makes the dish look better and tasty.

Ingredients

  • cooking oil - just enough to coat the potatoes
  • potatoes boiled in salted water and left to go cold (leftover potatoes) - cut into bite-sized pieces
  • a teaspoon or two of smoked paprika - to taste
  • smoked bacon lardons or diced pancetta
  • a small handful of spinach
  • black pepper to season - salt if needed
  • 1 egg - fried

Very easy to make and ready in less than 10 minutes!

Put a little oil into a small bowl and mix in the paprika. Add the cooked potatoes and stir to coat.

Put the bacon or pancetta into a hot frying pan (no need to add oil) cook until crispy, then remove and set aside.

Without washing the pan. Add the prepared potatoes and scrape the sides of the bowl to get all that lovely paprika oil into the pan.

Over medium/high heat, cook the potatoes until piping hot.

Add the bacon back in and stir well to combine. Taste and season with black pepper and salt if needed - remember bacon is already salty.

Add a handful of spinach and cook until it wilts - it will take just a few seconds.

Serve topped with a nice fried egg.

Other yummy ideas to add or replace in:

Swap

  • bacon for chorizo
  • spinach for roasted/chargrilled peppers in oil (drained from the oil) 
  • spinach for sun-dried tomatoes in oil (drained for the oil)
  • cooked potatoes with frozen but defrosted hash browns - chopped, if using don't add the oil
  • cooked potatoes with tinned baby potatoes

Add

  • thinly sliced red or green chilli
  • mushrooms
  • thinly sliced bell peppers (capsicums)
