Looking for a dessert for one person?
Using one apple per serving makes this ideal for making a dessert for one.
The recipe below uses two apples, so if you can just half the amounts for one person.
I used Flora pro.activ which contains plant sterols. It's available in any good supermarket.
Plant sterols have been shown to lower blood cholesterol - happy days! 😉
Now, I don't usually like desserts but it has to be said the date and ginger stuffing turns almost toffee-like on top of the apples.
The orange and ginger spread is added at the end of cooking and melts over the apples. In a word, these baked apples are delicious.
Cooking apples
Dessert apples are not really suitable as they will fall apart when cooking, plus they are sweet in taste.
You really need cooking apples such as Bramley apples.
Ingredients

- ready-to-eat dates
- water
- Flora spread
- runny honey
- zest of an orange
- ground ginger
Suggested equipment
You will need an apple corer and a suitably sized non-stick baking dish.

Healthy Baked Apples Recipe
Ingredients
- 2 Bramley cooking apples - dessert apples will fall apart
- 30g (1oz) crystallised stem ginger - finely chopped
- 55g (2oz) ready-to-eat dates - finely chopped
- 4 tablespoons water
- 25g (1oz) Flora pro.activ
- 2 tablespoons runny honey
- zest of 1 orange
- ¼ teaspoon ground ginger
Instructions
- Using an apple corer remove the core, then score carefully with a sharp knife around the middle of the apples and put them on a baking tray.
- Mix the chopped dates and stem ginger together.
- Now fill the centre of the apples with the mixture. Add the water to the dish and bake for 30–35 minutes until soft and cooked through.
- Meanwhile, blend the Flora with the orange zest, ground ginger and honey. When the apples are cooked you should be able to easily insert a knife.
- Spoon the flavoured spread mixture over the top and allow it to melt over the apples.
