Halloumi Fries (sticks) with Chipotle Mayonnaise Dip
Coated in panko crumbs for extra crunch, ready in minutes.
So, what do we need to make these spicy halloumi fries?
- 1 x 225g halloumi - snip the packaging, drain the water and pat dry with kitchen paper
- 60g plain flour (all purpose)
- 1 x egg - lightly beaten
- 40g panko crumbs
- 1 ½ teaspoons cayenne pepper
- 1 teaspoon black pepper
Gather your ingredients and, in 3 separate dishes. Add flour to one bowl, egg to the second bowl and panko crumbs to the third bowl.
Mix the cayenne and pepper into the panko.
Cheats chipotle mayonnaise
I do not care a jot, I have no shame! 😂
Mix together 3 tablespoons mayonnaise with 1 tablespoon smoked chilli harissa with chipotle chilli.
Use less if you don't like it too spicy and that's it, job done 😉 I used the brand Belazu.
How to make halloumi fries or sticks
Top Tip!
Lay the halloumi on its side and you will see a natural split. Gently pull apart, and use a sharp knife to split the halloumi into two.
That way you will have sticks rather than bits that break away.
Cut each half into 4 equally-sized fries and, one at a time dip first into the flour, then the egg and then press into the panko crumbs making sure each one is coated well.
I used the Ninja Speedi 10-in-1 Rapid Cooker in air fryer mode. You can, of course, use any air fryer.
Oh my goodness, I love this machine 😍
It's not usually necessary to preheat your air fryer but, for halloumi fries it is, just 4 minutes will do.
So, select air fry set the temperature to 180°C - 360°F and preheat for 4 minutes
After 4 minutes add the halloumi fries.
I don't know why but every time I take a picture of the Ninja Speedi it comes out looking blue - it is in fact more grey/blue.....all very strange.
Keep them spaced apart and give them a light spray of oil.
Air fry for 5 minutes then turn.
Give that side a spray with oil and continue to air fry for a further 5 minutes. Remove and serve right away with the chipotle mayo dip.
Equipment
First up, you will of course need an air fryer you can spend as little or as much as you want to on an air fryer and silicone kitchen tongs are a good idea too.
Whatever you do, my top tip would be to buy the best you can afford, there's no way you won't love your air fryer!

Anyway, I say avoid the ones with a wire basket - they are a nightmare to clean.
High-end air fryers such as the Ninja Air Fryer Max have a really good non-stick coating.
Mine goes in the dishwasher every time because I'm lazy, but it still looks like new.
I've no idea how long I've had it but it's a good few years - I bought it when it first came out.
They now have a newer one which I'm sure is just as good....secretly I want it, but my Ninja addiction is getting out of control!

Ingredients

- 1 ½ teaspoons cayenne pepper
- 1 teaspoon black pepper
- 3 tablespoons mayonnaise
- 1 tablespoon smoked chilli harissa with chipotle chilli - I used Belazu brand (use less if you don't like it too spicy, remember you can always add more)!
Instructions
- Gather your ingredients and, in 3 separate dishes. Add flour to one bowl, egg to the second bowl and panko crumbs to the third bowl.
- Mix the cayenne and pepper into the panko.
- Lay the halloumi on its side and you will see there is a natural split. Gently pull apart, and use a sharp knife to completely split the halloumi into two.
- Cut each half into 4 equally-sized fries and, one at a time dip first into the flour, then the egg and then press into the panko crumbs making sure each one is coated well.
- Once the preheat has finished lay the fries in a single layer taking care they don't touch each other.
- Give the fries a quick spray of oil and air fry for 5 minutes.
- Now then turn and give them another quick spray of oil and continue to air fry for a further 5 minutes. Remove and serve right away with the chipotle mayo dip.
- Mix the mayonnaise and chilli harissa - that's it, job done! Set aside.
