Can I make this recipe vegan?

Yes, you can! For a completely dairy-free option, replace the feta with a plant-based alternative such as vegan feta and vegan ricotta.

You will need

  • Mini peppers
  • Feta cheese
  • Ricotta
  • Olive oil
  • Sweet pepper flakes

How to make feta stuffed peppers

Cut the peppers in half lengthways (keeping the stalk on) and remove the seeds.

Mix together the feta and ricotta using a fork to mash.

Feta and ricotta cheese mixed together.

Coat each pepper in a tiny amount of oil - on the outside only and spoon in the feta/ricotta mixture.

Lay them in a foil cooking tray and sprinkle with a few sweet red pepper flakes.

Cover the tray tightly with foil, put it onto the middle shelf of your preheated oven and cook for about 20 minutes.

Remove the foil and cook for a further 10 minutes.

Can I substitute ingredients?

You can use larger peppers instead, such as romano / horned peppers or small bell peppers.

Sprinkle with oregano instead of the pepper flakes - or use both!

Use cream cheese instead of feta

You could use only feta (leave the ricotta out) but you will have to add more olive oil or your finished peppers will be a bit on the dry side.

Feta Stuffed Mini Peppers

Cook in the oven or BBQ these feta stuffed sweet peppers are a great side dish.
Prep time: 10 MinCook time: 30 MinTotal time: 40 Min

Ingredients

  • 8 sweet mini peppers
  • 200g feta cheese
  • 250g ricotta
  • olive oil
  • sweet pepper flakes

Instructions

To cook in the oven - Preheat to 220°C/430°F
  1. Put not-quite-equal amounts of feta and ricotta (you want the full 200g of feta) into a bowl along with enough ricotta to make a thickish dip.
  2. Mash together with a fork. Once you have the desired consistency, add a little olive oil and mix again. If you want it smoother you can always use a food processor on pulse setting until you're happy.

How to cook on a kettle BBQ
  1. Once your coals are white.
  2. Cover the prepared peppers with foil and cook for about 20 minutes with the BBQ lid on and the vent open.
  3. Remove the foil and continue cooking for a further 10 minutes or so.
