Back then a few other food bloggers and I were each sent a Toshiba laptop and the ingredients to all make the recipe at the same time via Skype.

It was such a laugh as we were all trying to keep up with cooking following the chef from Gousto.

But as that was so long ago the post is no longer relevant since that particular laptop is no longer available.

The recipe was provided by Gousto - a British meal kit provider.

What is bulgur wheat?

Bulgur comes from cracked whole-grain kernels of wheat that get parboiled and dried before packaging.

It is packed with vitamins, minerals, and fibre and fibre-rich foods may reduce chronic disease risk, and can improve digestion and gut health. It is also key to promoting weight loss as it will keep you feeling fuller for longer.

Bulgur is really easy to cook and can be added to many dishes. It's the main ingredient in tabbouleh salad - a healthy lunchbox idea.

Barberries

Here in the UK dried barberries are quite hard to get, I have discovered them in Waitrose though and you can buy dried barberries over on Amazon.

What do barberries taste like?

Barberries taste similar to unsweetened dried cranberries. before using them in rice, grain dishes, or stuffing, you must first of all, plump them up in hot water. 😉

Ingredients

  • 250g halloumi cheese
  • 150g bulgur wheat
  • 2 red onions
  • 20g dried barberries
  • 1 tablespoon of pomegranate molasses
  • 10g fresh mint
  • 1 tablespoon of Ras el Hanout
  • 1 lemon
  • 1 teaspoon of black pepper
  • salt and black pepper to season

Bulgur Wheat Salad with Halloumi

Bulgur Wheat Salad with Halloumi

A delicious combo of Persian spiced halloumi with bulgur wheat.

Ingredients

  • 250g halloumi cheese
  • 150g bulgur wheat
  • 2 red onions
  • 20g dried barberries
  • 1 tablespoon of pomegranate molasses
  • 10g fresh mint
  • 1 tablespoon of Ras el Hanout
  • 1 lemon
  • 1 teaspoon of black pepper
  • salt and black pepper to season

Instructions

  1. Boil a kettle. Add the bulgur to a pot with 275 ml of boiling water, and cover it with a lid over medium-low heat.
  2. Simmer for 5-7 min or until almost all the water is absorbed. Remove and set aside with the lid on for 10 min, until dry and fluffy.
  3. Meanwhile, put the barberries in a small bowl, add 100 ml of hot water, add 1 tablespoon of sugar, and mix well.
  4. Peel the onions cut them in half and slice finely. Chop the mint finely and grate the zest of the lemon.
  5. Cut the halloumi into thin slices (approx. 1cm thick).
  6. Cut the lemon in half and squeeze the juice over the halloumi. Combine half the ras el hanout with the black pepper to make the spice mix and coat the halloumi with it.
  7. Add 1-2 tablespoons of oil to a large frying pan over medium-high heat. Once the oil is hot, add the onion and cook for 4-5 minutes, or until soft and lightly caramelised.
  8. Add 3 tablespoons of barberry water to the bulgur wheat. Drain the barberries and add to the bulgur wheat.
  9. Combine the barberry bulgur wheat with the mint, lemon zest, remaining ras el hanout, pomegranate molasses and 1-2 tbsp of oil.
  10. Season to your taste with salt and pepper.
  11. Push the onion to one side of the pan and add 1-2 tablespoons of olive oil. Add the halloumi and cook for 1-2 min on each side or until golden all over.
  12. Serve the bulgur wheat with the onion and halloumi.
