If you don't usually like to cook, this is likely the easiest dinner you'll ever make - no special skills are needed, it's that simple. 😉

If you didn't already know, I LOVE food, and eating!

Shop-bought ready meals have far too much salt and often a bunch of unpronounceable ingredients.

Cooking from scratch doesn't need to be costly - in fact, it can save you money.

Batch cooking something like my easy pasta sauce will make a quick pasta dinner in the time it takes to cook the pasta (around 10-12 minutes).

What is the difference between Parmesan and Pecorino cheese?

They might look the same but, Parmigiano Reggiano is made with cow's milk and tastes nutty and a bit milder overall, whereas Pecorino Romano is made with sheep's milk and is saltier and tangy.

So, if you're substituting Parmesan with Pecorino you might want to use a bit less, or no salt at all.

How to flatten a chicken fillet

It's really easy, just put each fillet between two sheets of cling film. Take something suitably bashabal and bash! 

Don't go too mad, though, or you'll tear the fillet. 😉

Equipment

large non-stick frying pan

a flat-sided meat tenderiser - or something suitable for bashing and flattening the chicken.

Ingredients

  • olive oil
  • 2 fat skinless chicken breast fillets
  • 2 medium-sized red onions - peeled and sliced
  • 1 large red bell pepper - deseeded and sliced
  • 1 large yellow bell pepper - deseeded and sliced
  • 1 fat clove of garlic - peeled and minced
  • sea salt and black pepper to season
  • a pinch of dried oregano
  • 100ml of dry white wine
  • 8 medium-sized cherry (grape) tomatoes - halved
  • a squeeze of lemon juice
  • Parmesan - freshly grated

    Once the dinner is cooked (don't forget this is a 35-minute recipe from start to finish) cut a thick slice of bread, pour yourself a nice glass of wine, and enjoy!

    To this recipe, you could also add any of the following

    • sliced courgettes (zucchini)

    Mediterranean Chicken Recipe

    Delicious and easy one pan chicken meal with peppers and onions.

    Ingredients

    • olive oil
    • 2 fat skinless chicken breast fillets
    • 2 medium-sized red onions - peeled and sliced
    • 1 large red bell pepper - deseeded and sliced
    • 1 large yellow bell pepper - deseeded and sliced
    • 1 fat clove of garlic - peeled and minced
    • sea salt and black pepper to season
    • a pinch of dried oregano
    • 100ml of dry white wine
    • 8 medium-sized cherry (grape) tomatoes - halved
    • a squeeze of lemon juice
    • Parmesan - freshly grated

    Instructions

    1. Start by putting each chicken fillet between two sheets of cling film. Bash until they are flat and even, then set aside.
    2. Heat a tablespoon of olive oil in a large frying pan and add the onions. Cook over low heat until beginning to soften but not colour; it'll take about 15 minutes.
    3. Add the peppers and garlic and cook for about 5 minutes until the peppers are soft - keep moving them about taking care not to let the garlic burn.
    4. Season with a little sea salt and a good amount of black pepper and add the oregano. Remove everything from the pan and set aside.
    5. Now, without washing the pan, add another tablespoon of olive oil. Once hot add the chicken and cook over medium-high heat for about 2 to 4 minutes per side. The exact time will depend on how thick your chicken is.
    6. When you've made sure the chicken is almost cooked pour in the wine. Add the tomatoes. Put the onions and pepper mixture back into the pan. Heat everything through, squeeze over a little lemon juice and check the seasoning.
    7. Top with freshly grated Parmesan and put a lid on (or cover loosely with foil) for a few minutes to melt the cheese.
    8. Serve with whatever else you fancy, a green salad and fresh crusty bread for mopping.
