One Pan Chicken Recipe

If you don't cook, this is possibly the easiest dinner you'll ever make - no special skills are needed, it's that simple. 😉
Personally, I can't get my head around anyone who doesn't like cooking - we all have to eat, so you might as well eat something good.
But with that said, I LOVE food, and eating!
Shop-bought ready meals have far too much salt and often a bunch of unpronounceable ingredients.
Cooking from scratch doesn't need to be costly - in fact, it can save you money.
Batch cooking something like my easy pasta sauce will make a quick pasta dinner in the time it takes to cook the pasta (around 10-12 minutes).
The difference between Parmesan and Pecorino cheese?
They might look the same but, Parmigiano Reggiano is made with cow's milk and tastes nutty and a bit milder overall, whereas Pecorino Romano is made with sheep's milk and is saltier and tangy.
So, if you are substituting Parmesan with Pecorino you might want to use a bit less or not add salt at all to your dish.
How to flatten a chicken fillet
It's really easy, just put each fillet between two sheets of cling film. Take something suitably bashabal and bash!
Don't go too mad, though, or you'll tear the fillet.
Equipment
a large non-stick frying pana flat-sided meat tenderiser - or something else suitable for bashing and flattening the chicken.
Ingredients
- olive oil
- 2 fat skinless chicken breast fillets
- 2 medium-sized red onions - peeled and sliced
- 1 red bell pepper - peeled and sliced
- 1 yellow bell pepper - peeled and sliced
- 4 medium-sized cherry tomatoes - halved
- sea salt and black pepper to season
- 100ml of dry white wine
- a squeeze of lemon juice
- Parmesan - freshly grated
Once the dinner is cooked (don't forget this is a 35-minute recipe from start to finish) cut a thick slice of bread, pour yourself a nice glass of wine, and enjoy!

Mediterranean Chicken Recipe
Ingredients
- olive oil
- 2 fat skinless chicken breast fillets
- 2 medium-sized red onions - peeled and sliced
- 1 red bell pepper - peeled and sliced
- 1 yellow bell pepper - peeled and sliced
- 4 medium-sized cherry tomatoes - halved
- sea salt and black pepper to season
- 100ml of dry white wine
- a squeeze of lemon juice
- Parmesan - freshly grated
Instructions
- Start by putting each chicken fillet between two sheets of cling film and bash until they are flattish and even. Don't go too mad, it's just so they both cook quickly and evenly.
- Heat a good tablespoon of olive oil in a large frying pan and add the onions. Cook over a low heat until beginning to soften but not colour; around 10 minutes.
- Add the peppers and cook for a further 5 minutes or so until they too are soft.
- Season with a little sea salt and a good amount of black pepper. Remove and set aside while you get on with the chicken.
- Don't wash the pan, add another tablespoon of olive oil and add in the chicken. Cook over a medium-high heat quickly for about 2 to 4 minutes per side. The exact time, of course, will depend on how hot your pan is and how thick your chicken is.
- When you've made sure the chicken is almost cooked. Add a splash of white wine and cook till it's almost gone.
- Add the cooked onions and peppers back to the pan and add in the sliced tomatoes and heat through.
- Make sure the chicken is now cooked and squeeze over a little lemon juice and check the seasoning.
- Top with freshly grated Parmesan and put a lid on (or cover loosely with foil) just for a couple of minutes to melt the cheese.
- Serve with whatever else you fancy, a green salad and fresh crusty bread for mopping along with a nice glass of wine and enjoy!
