Easy Huevos Rancheros with Feta

My favourite Mexican breakfast recipe for one!

The best Mexican breakfast is filled with delicious spiced and flavorful, but Mexican food doesn't have to contain chillies - so you can adapt the ingredients to suit your taste. More on that in a bit.

What are huevos rancheros?

Huevos rancheros or ranch-style eggs is a breakfast dish consisting of eggs served in the style of the traditional large mid-morning fare on rural Mexican farms; source Wikipedia.

  • vegetable oil sunflower oil or olive oil
  • 1 corn tortilla wrap
  • 1 egg
  • 200g can black beans - rinsed and well drained
  • 1 tsp cumin
  • 1 tsp salt - to taste
  • juice ½ lime
  • 1 or 2 spring onions (scallions) - thinly sliced
  • 1 medium heat red chilli pepper - deseeded and very thinly sliced
  • 50g feta cheese - crumbled
  • hot chilli sauce - I used sriracha
  • freshly chopped parsley or coriander - optional

How do you cook huevos rancheros?

Well, it's really easy!

Add a little oil into a saucepan and stir in the black beans along with the lime juice, cumin, and salt.

Heat gently and have a taste and adjust the seasoning adding more salt if needed. Then set aside.

Heat a little oil in a frying pan over high heat. Add the tortilla and fry for 1-2 mins on each side until it's just starting to crisp. Transfer to a plate.

Crack the egg into the frying pan and cook to your liking. Meanwhile, put the beans back on the heat stirring occasionally so they are not cold.

Spread the beans over the tortilla.

Top with the fried egg, spring onions feta and chilli sauce. Sprinkle over the parsley or coriander if using. Squeeze over a little more lime juice just before eating.

Recipe Top Tips!

To make this less spicy and if making for kids:

  • If you wish you can replace the hot chilli sauce with tomato ketchup - not traditional at all but you can do this!
  • Replace the chillies with very thinly sliced red bell pepper.
  • Use refried beans instead of black beans - if you do, you will not want to add salt.
  • Replace the feta with any cheese of your choice.
