Chewy Chocolate Orange Cookies Recipe

Chewy, gooey, orangey and most definitely chocolaty. But first of all, I must point out I based my recipe on one I found over at Baker by Nature - an excellent baking blog.

You really should only ever use Pure vanilla extract - yes it's a tad expensive but it will make all the difference. You do not want vanilla essence as it's nowhere near the same thing. 

By the way, you'll find it cheaper in any good supermarket rather than over on Amazon - just saying!

You will need a wooden spoon, they are only 50p in Tesco, other supermarkets are available of course! Plus you'll need a bowl that can go into the microwave.

If you can't get Lindt chocolate, you can of course use any other orangy dark chocolate. You need unsweetened cocoa powder - I like Bournville cocoa powder.

How to make the cookies

In a bowl mix together the flour, cocoa powder, baking powder, and salt and set aside.

Line two large baking sheets with non-stick BacoFoil and set aside. Always cook on the non-shiny/dull side of BacoFoil. If not, you can use greaseproof paper lightly sprayed with non-stick cooking spray. 

Put the chocolate in a large microwave-safe bowl and heat in the microwave for 15 seconds at a time, mixing in between until the chocolate has almost melted and then add the butter.

Continue heating until the chocolate and the butter have completely melted and can be mixed easily.

Mix in the vanilla extract and add both sugars and orange zest, a wooden spoon works well for this.

Add the eggs a little at a time again mixing well in between. Finally, add just 2 tablespoons of the milk.

Now add the dry ingredients into the wet ingredients and stir well. If you think the mixture looks too dry, add another tablespoon of milk.

Scoop 2 tablespoons of the cookie dough onto the prepared baking sheets - you should get 5 per tray.

Bake one tray at a time, reducing the oven temperature to 150C/300F or Fan 130C as soon as they go into the oven. Bake for 16 to 18 minutes, or until the edges are just set, take care not to overbake.

Add a few pieces of the chocolate orange chunks on top of each of the warm cookies and allow them to completely cool on the baking sheet before serving.

Chewy Chocolate Orange Cookies Recipe

Rich dark and chocolatey, these cookies are chewy and delicious. Only use pure vanilla extract - rather than the much cheaper vanilla essence, as the two are just not the same.

Ingredients

  • 150g plain (all-purpose) flour
  • 2 and 1/2 tablespoons cornflower
  • 3 tablespoons unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 170g dark 70% cocoa chocolate - chopped
  • 200g Lindt intense orange chocolate – chopped (keep 4 squares back for topping the cookies later on)
  • 30g unsalted butter
  • 2 teaspoons vanilla extract
  • 40g light brown sugar
  • 50g granulated sugar
  • 1 teaspoon orange zest
  • 3 medium eggs - lightly beaten
  • 2-3 tablespoons milk

Instructions

Preheat oven to 160°C/325°F or Fan 150 C
  1. Line two large baking sheets with non-stick BacoFoil or you can use greaseproof paper lightly sprayed with non-stick spray and set aside.
  2. First, sieve together the flour and cocoa powder.
  3. In a bowl mix the flour and cocoa powder with the baking powder, and salt and set aside.
  4. Put the chocolate in a large microwave-safe bowl and heat in the microwave for 15 seconds at a time, mixing in between until the chocolate has almost melted and then add the butter.
  5. Continue heating until the chocolate and butter have completely melted and can be mixed easily.
  6. Add in the vanilla extract, both sugars and orange zest - a wooden spoon works well for this.
  7. Add the eggs a little at a time again mixing well in between. Finally, add just 2 tablespoons of milk.
  8. Now add the dry ingredients to the wet ingredients and stir well - if you think the mixture looks too dry, add the other tablespoon of milk.
  9. Scoop the cookie dough onto the prepared baking sheets each scoop being approx 2 tablespoons, you should get 5 cookies per tray.
  10. Only bake one tray at a time on the middle shelf. Reduce the oven temperature to 150°C/300°F or fan 130°C as soon as they go into the oven.
  11. Bake for 16 to 18 minutes, or until the edges are just set, take care not to overbake.
  12. Add a few pieces of the chocolate orange chunks on top of each of the warm cookies and allow them to completely cool on the baking sheet before serving.
