Suddenly I'm all into sweet potatoes!
When I read the benefits of sweet potatoes, and actually got around to cooking them, I'm now hooked and forever searching for sweet potato recipes.

Sweet Potatoes are Delicious and Nutritious!
Last week I made baked sweet potatoes and we loved them. Baked sweet potatoes do not need any butter, they are already kinda buttery in taste as they are.
Again, salt is only needed on the skin while baking. So, they are a far healthier option to satisfy my baked potato addiction.
Sweet potatoes are nutritious and delicious root vegetables and just one sweet potato gives you around 400% of the vitamin A you need each day - who knew?
Quick Word on Oil
These are far quicker than baking in the oven. You hardly need any oil, but I suggest you don't use those low-calorie cooking sprays if you don't want to ruin your non-stick pans.
The use of cooking sprays is not recommended for use on non-stick cookware as cooking sprays burn at lower temperatures and will damage the non-stick coating of your product.
An invisible buildup will impair the nonstick release system causing food to stick. So, always check the manufacturer's advice on your cookware.
I always use vegetable/rapeseed oil or olive oil.
How to Make Potato Slices
Start by gathering your ingredients - yes all three of them! I told you this was a simple recipe and even the salt is optional.
Wash and dry the sweet potato. Then slice into ¼-inch rounds.
You will need a large heavy-based or cast iron pan with a lid - if yours doesn't have a lid you can use kitchen foil.
Add enough oil to coat the bottom of the pan and heat it up. No idea why but I forgot to take pictures, but then again I'm pretty sure you don't need photos of this.
Add the potato slices in just one layer and a light sprinkling of salt (optional). Put the lid on or cover it with foil.
Cook over a medium heat for 2-3 minutes, then have a quick look and once they are nice and golden, turn to cook the other side for 2-3 minutes. Be careful as they will burn quite quickly.
Serve right away, or keep warm, while you cook the rest. I drizzled over some balsamic vinegar and added the obligatory food bloggers' parsley for good measure!
It really is worth buying the best balsamic vinegar you can afford - there's no comparison to cheap watery balsamic.

Sweet Potato Slices - Side Dish
Ingredients
- 1 large sweet potato - washed and dried, then sliced into ¼ inch slices (6. mm)
- vegetable oil - enough to coat the bottom of your pan
- Good quality balsamic vinegar - to drizzle
- sea salt flakes (optional)
- chopped flat-leaf parsley (optional)
Instructions
- Heat up your frying pan and add just enough oil to coat the bottom.
- Add the potato slices in just one layer and a light sprinkling of salt (optional). Put the lid on or cover it with foil.
- Cook over a medium heat for 2-3 minutes, then have a quick look and once they are nice and golden, turn to cook the other side for 2-3 minutes. Be careful as they will burn quite quickly.
- Serve right away, or keep warm while you cook the rest.
- Drizzle over the balsamic vinegar and parsley if using.
