Fried potato slices are easy to make and are a nice side dish to many meals.
I used sweet potatoes because they are rich in vitamins and minerals, including vitamins A and C, potassium, fibre, and zinc.

Delicious and nutritious!
Last week I made baked sweet potatoes and we loved them.
Baked sweet potatoes do not need any butter, they are already kinda buttery in taste as they are.
Again, salt is only needed on the skin while baking, so they are a far healthier option for satisfying my baked potato addiction.
Sweet potatoes are nutritious and delicious root vegetables and just one sweet potato gives you around 400% of the vitamin A you need each day - who knew?
A quick word on oil
These are far quicker than baking in the oven and you hardly need any oil, but I suggest you don't use those low-calorie cooking sprays if you don't want to ruin your non-stick pans.
Low-calorie cooking sprays are not recommended for use on non-stick cookware as they burn at lower temperatures and will damage the non-stick coating of your product. 😱
An invisible buildup will impair the nonstick release system causing food to stick.
Cooking sprays also contain lecithin (an emulsifier) along with dimethyl silicone, which is an anti-foaming agent; and a propellant such as propane or butane.
Over time, the lecithin in the nonstick spray will cook onto the surface of your pan, build up, and become nearly impossible to remove.
So, always check the manufacturer's advice on your cookware. I always use vegetable/rapeseed oil or olive oil.
You can buy Crisp 'n' Dry Rapeseed Spray Oil, it is 100% rapeseed oil with nothing else added.
However, I've tried two different bottles and both times I've found the spray to be dreadful.
Why? Because it doesn't spray properly - it goes everywhere other than in the pan!
Equipment
All you need is a non-stick frying pan with a lid.
If yours doesn't have a lid you can use kitchen foil. 😉
How to make potato slices
Start by gathering your ingredients - yes all three of them! I told you this was a simple recipe!
The salt is optional but will bring out the flavour and just a tiny bit is needed.
Wash and dry the sweet potato. Then slice into ¼-inch rounds.
Add just enough oil to lightly coat the bottom of the pan and heat it up.
Once hot, add the potato slices in just one layer and a light sprinkling of salt (optional). Put the lid on or cover it with foil.
Cook over medium heat for 2-3 minutes, then have a quick look.
Once they're nice and golden, turn to cook the other side for 2-3 minutes. But be careful as they will burn quite quickly.
Serve right away, or keep warm, while you cook the rest.
I drizzled over some balsamic vinegar and added the obligatory food bloggers' parsley for good measure! 😀
It's worth buying the best balsamic vinegar you can afford - there's no comparison to cheap watery balsamic.

Fried Potato Slices
Ingredients
- 1 large sweet potato - washed and dried, then sliced into ¼ inch slices (6. mm)
- vegetable oil - enough to coat the bottom of your pan
- good quality balsamic vinegar - to drizzle
- sea salt flakes (optional)
- chopped flat-leaf parsley (optional)
Instructions
- Heat your frying pan and add just enough oil to coat the bottom.
- Add the potato slices in just one layer and a light sprinkling of salt (optional). Pop the lid on or cover with foil.
- Cook over medium heat for 2-3 minutes, then have a quick look. Once they are nice and golden, turn to cook the other side, again for 2-3 minutes. Be careful as they will burn quite quickly.
- Serve straight away. Drizzle other a little balsamic vinegar and sprinkle with the chopped parsley.
