Baked sweet potato with avocado and feta, is simple, easy, delicious and nutritious. I never used to like sweet potatoes and I'm still not keen on sweet potato fries!

But I've since decided that baked sweet potatoes are actually really delicious and unlike the usual baked jacket potato that in my opinion can not be eaten without adding a good amount of butter and salt - both of which are not going to do you a bit of good!

I've adapted the recipe from one by Jamie Oliver.

Are Baked Sweet Potatoes Healthy?

Baked sweet potatoes do not need any butter, they are already kinda buttery in taste as they are.

Salt is, again in my opinion, only needed on the skin while baking. So for me, they are a far healthier option to satisfy my baked potato addiction.

You can bake them and stuff them with whatever takes your fancy.

Are Sweet Potatoes Good for Weight Loss?

Sweet potatoes can help with weight loss if that's what you're aiming for. It just depends on how you enjoy them.

They're wonderfully delicious, nutrient-rich, and high in fibre and this means that they can help you lose weight by keeping you feeling full for longer.

Stuffed Sweet Potato Ideas

  • Black beans, avocado, coriander (cilantro) and sour cream or Greek yoghurt
  • Greek yoghurt and spring onions (scallions)
  • Sour cream, chives, salt and pepper
  • Crispy bacon
  • Toss leftover cooked chicken with Frank's hot sauce and top with fresh chives
  • Charred or roasted corn
  • Jalapeños

Or, pretty much whatever you want!

Recipe Top Tips!

Don't wrap the potatoes in foil or the skin won't crisp up. Just wash and dry them, coat them in a little oil. Sprinkle with sea salt and freshly ground black pepper.

You don't have to put them on foil - it's just that's how I serve them. You can just put them directly onto the bars of the oven.

Sweet Potato Nutrition

Sweet potatoes are nutritious and delicious root vegetables and just one sweet potato gives you around 400% of the vitamin A you need each day. This helps keep your eyes healthy as well as your immune system, your body's defence against germs.

Most sweet potatoes are orange in colour, but there are others that come in purple, yellow, white, pink, and red.

Sweet potatoes are a natural source of beta-carotene and Vitamin A, which is essential in helping the body fight off infections.

Oven Baked Sweet Potatoes with Avocado and Feta

Oven Baked Sweet Potatoes with Avocado and Feta

Baked sweet potato with avocado and feta, simple, easy, delicious and nutritious.

Ingredients

  • 2 big sweet potatoes
  • olive oil
  • 1 ripe avocado
  • 1 lime
  • a small handful of pumpkin seeds
  • 70g feta
  • Optional - smoky chipotle salsa for serving

Instructions

Preheat your oven to 180°C/360°F/Gas 4
  1. Wash and dry the sweet potatoes. Drizzle with oil and sprinkle with sea salt and black pepper.
  2. Pop each of them onto a piece of foil (don't wrap them) and then onto a baking tray and bake in the oven for 1 hour to 1 hour 15 minutes or until tender.
  3. When the potatoes are done you will be able to easily insert a sharp knife.
  4. Meanwhile, in a dry pan, lightly toast the pumpkin seeds and set them aside.
  5. When the potatoes are nearly done, destone and roughly chop the avocado and toss with the juice of half a lime. Keep the other half of the lime for serving.
  6. Top the potatoes with the avocado, crumble over the feta and sprinkle with the toasted seeds.
  7. Spoon over a little smoky chipotle salsa if using.
