How to make Coleslaw without Mayo
This colourful tangy coleslaw is a much healthier version of the traditional mayonnaise laden coleslaw we all know and love.

- Red and white cabbage
- Carrots
- Red chilli
- Spring onion (green onion)
- Olive oil
- White wine vinegar
- Pure maple syrup
- Garlic
- Cayenne pepper
- Salt and black pepper
Homemade Coleslaw
¼ of a medium red cabbage - thinly sliced
¼ of a medium white cabbage - thinly sliced
1 large carrot - grated
1 red chilli - seeded and finely chopped
2 spring (green) onions - sliced
For the Dressing
2 tablespoons extra virgin olive oil
2 teaspoons white wine vinegar
2 teaspoons pure maple syrup
½ clove garlic - grated or very finely chopped
pinch of cayenne pepper - to taste
pinch of salt - to taste
Freshly ground black pepper
How long will Coleslaw keep?
Coleslaw must be kept in a fridge in a small food storage container and it will last 2-3 days. Personally, I wouldn't keep it any longer than 2 days.
If your coleslaw has mayonnaise it really doesn't last long at all as you'll find the mayo turns watery and horrid, so once opened it's best eaten the same or the next day.

Okay, this is a healthy recipe but the first thing that springs to mind is pizza! Kinda makes you feel a little less guilty than if you have the more traditional mayo coleslaw with pizza - right?

- Or, if you're really on a health kick, this no mayo coleslaw will be perfect with a pan-seared skinless chicken fillet.

Coleslaw without Mayo
Ingredients
- ¼ of a medium red cabbage - thinly sliced
- ¼ of a medium white cabbage - thinly sliced
- 1 large carrot - grated
- 1 red chilli - deseeded and finely chopped
- 2 spring (green) onions - sliced thinly
- 2 tablespoons extra virgin olive oil
- 2 teaspoons white wine vinegar
- 2 teaspoons pure maple syrup
- ½ clove garlic - grated or very finely chopped
- pinch of cayenne pepper - to taste
- pinch of salt - to taste
- Freshly ground black pepper
Instructions
- Put all the prepared ingredients for the slaw into a large bowl.
- In a small bowl, whisk together all the ingredients for the dressing. Have a taste and adjust the seasoning - it may be you need a little more olive oil.
- Once you're happy with the taste, pour the dressing over the slaw and mix well.
- Cover with cling film and pop into the fridge for at least an hour to allow flavours to marinate together - 30 minutes will be okay if you're really in a hurry!
