Cauliflower Cheese Recipe with Broccoli

A great way to get kids to eat more veg! 

When you next make your usual cauliflower cheese recipe try adding broccoli, it's easy to make and can be prepared in the morning to cook later in the day.

There's nothing worse than grey-coloured broccoli but you can find out how to keep the colour in cooked vegetables

Just put them into ice-cold water immediately after cooking. Drain well and reheat later in the microwave before serving.

For this recipe, I cooked the vegetables, put them into cold water, drained them well and then carried on with making the cheese sauce.

Ingredients 

  • Cauliflower
  • Broccoli
  • Flour
  • Butter
  • Milk
  • Cheese
  • Salt
  • English mustard - optional, but makes all the difference 😋

In Jamie Oliver's recipe for cauliflower and broccoli cheese, he adds garlic but I really don't think garlic has any place in this, well, that's my opinion and I'm just saying!

For extra calories, you can add chopped crispy bacon - nope, it's no good for you, but it is delicious.

 You can of course just make this using all cauliflower for a more traditional cauliflower cheese recipe.

Do I need any Special Equipment to make this?

No, just saucepans and a non-stick baking dish. I like to use a glass pyrex dish as they last forever and are really easy to clean. 

You will find a wooden spoon does a great job of making the cheese sauce nice and smooth. By the way, you can find them at Tesco for just 50p! 

What to serve it with 

  • Chicken
  • Pork steaks
  • Steak
  • Jacket Potato
  • Basically, you can serve it with anything that takes your fancy!

Can you freeze this?

Well, some say you can, but I most definitely do not recommend it as on defrosting the cheese sauce will become thin and watery. Shop-bought readymade cauliflower cheese has a whole list of added ingredients to stop this from happening.

Cauliflower and Broccoli Cheese

Cauliflower and Broccoli Cheese

An easy, cheesy side dish!

Ingredients

  • 4 tablespoons plain flour (all-purpose in the US)
  • 50g unsalted butter
  • 500ml whole milk
  • 180g Cheddar cheese - grated
  • 2 teaspoons of English mustard - optional, but it's good!
  • a pinch or 2 of salt
  • a pinch of paprika - optional

Instructions

Prepare the vegetables
  1. Cook the cauliflower and broccoli in separate saucepans in plenty of boiling, salted water.
  2. Partly cover with the saucepan lid. It will take about 12 -15 minutes until you can easily insert a knife into it so you know it’s cooked. You don’t want mush though, so be careful not to overcook.
  3. Drain and add ice-cold water - this will stop the vegetables from cooking further and will keep their colour.
  4. Once the veg is cold, drain well and put the cauliflower and broccoli into a buttered oven-proof dish.
To make the cheese sauce
  1. Melt the butter and add the flour and cook for 3 minutes over a low heat, otherwise, the sauce will taste floury and your sauce will be lumpy.
  2. Remove from the heat and stir in the milk a little at a time - a wooden spoon is best for this.
  3. Put it back on the heat and bring it almost to a boil, stirring all the while.
  4. Now, remove from the heat and stir in the mustard and two-thirds of the cheese into the sauce, have a taste and season with salt and pepper.
  5. Pour the cheese sauce on top of the cauliflower and broccoli, then sprinkle the remaining cheese on top along with a little paprika pepper - not too much just a sprinkling will do.
  6. Bake in a preheated oven for about 20-25 minutes until golden brown and bubbling.
