Easy Potato Salad with Cheese - no eggs! 

Classic potato salad doesn't have to be bland and boring - instead, try my loaded potato salad.

I say the best potato salad has cheese in it, after all, everything is better with CHEESE 😋

Cheese is always a good thing, so why not add it to your potato salad?

Now, I'm not a fan of mild cheese, I much prefer extra matured Cheddar, but red Leicester has a place here as it adds a bit of colour too.

Potato salad is simple to make, it takes just minutes and is perfect for outdoor eating.

Great for picnics or as a side for BBQs, or indeed whenever you feel the need to eat potato salad, in fact, it's perfect for lunchboxes

Have a go and make it yourself, and I guarantee you'll never buy shop-bought stuff again.

Potato salad with cheese ingredients

  • Baby potatoes (no need to peel) cooked in salted water and left to go cold - halved or quartered depending on their size
  • Spring onions (scallions, green onions) - thinly sliced
  • Chives - snipped with scissors
  • a mix of Cheddar and red Leicester Cheese
  • Mayonnaise
  • Cayenne pepper

What can you add to potato salad?

In order to liven up a bland potato salad, you can add any of the following ingredients although you probably wouldn't want to add all of them!

  • Bacon - Gordon Ramsay adds cooked crispy bacon to his potato salad recipe
  • Celery - keep it diced really small and be sure to remove the stringy outside part with a Y-peeler
  • Red onion - again diced really small as no one wants a big bit of raw onion
  • Diced dill pickle
  • Chopped capers 
  • Chopped flat leaf parsley
  • Wholegrain mustard (instead of yellow mustard)
  • chopped hard-boiled eggs

What potatoes should you use?

Any kind really, just as long as they're cut small and cooked. You can leave the skin on if you want to - it's entirely up to you.

New potatoes are an excellent choice and Jersey Royals or British Gems are delicious with the skin on.

There's little point in giving a proper recipe since there's no such thing as 'proper' just add as much or little of the following as it depends on how many you're serving and how greedy everyone is!

Be sure to use good quality mayonnaise, I always use Hellman's mayonnaise, as it really is the best.

Recipe Top Tip!

Only use cooked but cold potatoes otherwise they will melt the cheese and mayo and you'll have an oily mess!!

Other kinds of potato salads you might like

Mediterranean potato salad

potatoes, bell pepper, cucumber, red onion, feta, lemon juice, a splash of red wine vinegar, salt and pepper to taste.

French-style potato salad

with extra virgin olive oil, white wine vinegar, Dijon mustard, shallots, flat leaf parsley and salt and black pepper to taste.

Spanish potato salad

potatoes, garlic, red wine vinegar, red bell pepper, olives, shallot, parsley, salt to taste and a squeeze of lemon.

Italian potato salad

potatoes, garlic, extra virgin olive oil, white wine vinegar and parsley

American potato salad

potatoes, hard-boiled eggs, mayonnaise, onion, spring onions (green onions) bell pepper, celery and salt and pepper to taste.

Mexican potato salad

potatoes, cumin, mayonnaise, hot sauce, lime juice, red onion, sweetcorn, black beans, tomatoes, jalapenos, coriander, and salt to taste.

Best Potato Salad Recipe

There are no actual ingredient amounts as it depends on how many you're serving.

Ingredients

  • Baby potatoes (no need to peel) cooked in salted water and drained well and left to go completely cold - halved or quartered depending on their size
  • Spring onions (scallions, green onions) - thinly sliced
  • Chives - snipped with scissors
  • a mix of Cheddar and red Leicester Cheese
  • Mayonnaise
  • French's Classic yellow mustard
  • Cayenne pepper

Instructions

  1. Put the potatoes into a bowl and add enough mayonnaise just to coat them.
  2. Add a little squeeze of yellow mustard and a tiny pinch or two of cayenne pepper. Have a taste and add more to get the taste you're after.
  3. Now add the cheese, spring onions and chives and gently mix together. Serve straight away.
