To make crispy butterscotch chocolate popcorn bars, you’ll need popcorn, of course. And good-old plain popcorn will do. We’re flavouring it ourselves with a homemade caramel sauce.

Talking about caramel, you’ll need brown sugar, butter, and just a few tablespoons of honey to make the caramel sauce. Making caramel sauce is thrilling! But don’t walk away while making it; the stuff burns fast!

You’ll also need crispy butterscotch and dark chocolate chips or buttons. Quality matters here, so source premium chocolate. You’ll also need vanilla extract and a teaspoon of sea salt flakes to round up the bars’ flavour. 

Tips for the Perfect Caramelised Popcorn

1. For the crunchiest and puffiest caramelised popcorn, make sure you’re working with cold popcorn and not freshly made. Fresh popcorn can still be too hot to let the caramel set. 

2. Having said that, make the popcorn yourself instead of using store-bought. When it comes to popcorn, the fresher, the better - yes, popcorn does go stale and mushy as time goes by.

3. Make homemade caramel sauce. It’s not the easiest thing to cook, but it’s totally worth it. You only need three ingredients, a steady hand and some patience. Once you master homemade caramel, you’ll want to make it as often as you can!

Make the Butterscotch Chocolate Popcorn Bars Your Own!

The best part of having a reliable recipe is that you can play around with it for different results. In this case, you can definitely substitute the popcorn with other crackly bites to create entirely new treats.

Crispy Butterscotch Chocolate Popcorn Bars Recipe

Combining Lily O'Brien's Crispy Butterscotch Chocolate and creamy caramel with regular popcorn is an absolute winning combination - a chewy, sweet and deliciously chocolatey treat.

Ingredients

  • 225g brown sugar
  • 85g honey
  • 115g butter
  • 2 tsp vanilla extract
  • 1/2 tsp slightly heaped baking soda
  • 1 tsp sea salt flakes
  • 300g plain popped popcorn
  • 220g Lily O’Brien’s Crispy Butterscotch Share Bag (2 bags)
  • 300g Lily O’Brien’s Dark Chocolate Buttons

Instructions

  1. Divide the popcorn between two bowls. Line a large baking tray and a square traybake tin with baking parchment. Preheat oven to 120ºC /100ºC fan.
  2. Add the butter, sugar and honey to a heavy-based pan over medium heat. 
  3. Working quickly, stirs the ingredients until melted, then once combined, turn up the heat and boil vigorously for 2 minutes or until the caramel turns golden. Do not stir when boiling.
  4. Remove the caramel from heat and immediately add salt, vanilla and the soda and stir quickly until smooth. 
  5. BE CAREFUL!! The mixture will bubble and rise when you add in these ingredients!
  6. Working quickly, add half of the caramel into one of the popcorn bowls and stir to combine.
  7. Add the remaining bowl of popcorn into your working bowl, and then pour over the remaining caramel. 
  8. Stir all the popcorn and caramel to combine. Transfer the popcorn to your large, lined baking tray and spread out evenly with a spoon.
  9. Place in the oven and bake for 60 minutes. Remove the tray every 15 minutes and stir the popcorn, coating the pieces without caramel as you stir.
  10. Remove from the oven and leave the caramel popcorn to cool on the tray. 
  11. Whilst cooling, the caramel will harden and stick the popcorn together, so break up into individual pieces frequently as they cool.
  12. WARNING! Don’t eat hot caramel popcorn; please wait until it’s cooled!
  13. Melt the Crispy Butterscotch chocolate and the dark chocolate together in a microwave until just before melting, and then stir until smooth.
  14. Pour 1/3 of the chocolate into the smaller lined baking tray and paint an even thin layer on the base using a pastry brush.
  15. Scatter the caramel popcorn evenly across the top of the chocolate in the tray. Break large pieces if necessary and ensure popcorn is as separate and even as possible. 
  16. Gently press the popcorn into the chocolate. You will have some popcorn leftover which you can use to decorate and nibble on later.
  17. Pour the remaining chocolate over the popcorn, making sure to coat all the popcorn as evenly as possible.
  18. Refrigerate for an hour to allow it to set.
  19. Remove from the fridge and sit for 10 minutes before cutting into bars and decorating with the remaining caramel popcorn pieces.
