A simple salad with just a couple of ingredients. Easy and delicious with a salad dressing made with lemon-infused olive oil.
Simple Salad
Having been kindly sent a bottle from Italia Regina; an online Italian food company that sources quality ingredients from Italy and delivers them to your door here in the UK, I wondered what I should make.
Dishes such as lemon linguine, or how about drizzling over couscous or bulgur wheat; or even to make a lemon polenta olive oil cake?
I was sent both the Lemon-infused Olive Oil from Marchesi along with a bottle of Giuseppe Giusti Balsamic Vinegar. Italia Regina's delivery service was excellent with the items very well packaged.
I love the bottles so much so I really didn't want to open them, but of course, I had to in order to try them!
Since I had some lovely tomatoes in my fridge waiting to be used and I wondered if lemon oil and tomatoes would work.
Yes, I realise it may be a little surprising but it actually worked well in a Lemon Caper dressing for my simple Tomato and Onion salad.
Lemon-infused Olive Oil from Marchesi
Well now, this is so, so good and at €6.60 a bottle (around £5.70) it's good value for money. You really don't need a lot of it. Lovely lemony flavour but it's not too strong, just right.
Giuseppe Giusti Balsamic Vinegar
I think this balsamic vinegar is of excellent quality, we all know you can pay silly prices for good balsamic vinegar and it's true you really can tell the difference between a pricey balsamic.
But I'd say Giuseppe Giusti is a great price at €12.00 (around £10.50) it is thick in consistency and totally delicious.

Simple Salad Dressing
Ingredients
- a handful of mixed baby tomatoes - cut in half
- half a red onion - very thinly sliced
- freshly chopped flat-leaf parsley - leave only
- 2 tablespoons of Lemon-infused Olive Oil from Marchesi
- pinch of sea salt
- pinch of black pepper
- a few capers - taken from a jar and rinsed well whether they are in brine or salt you need to rinse them then dry on kitchen paper.
Instructions
- Put the prepared tomatoes and onions in a bowl. Mix together the olive oil, capers, sea salt and black pepper.
- Pour over the tomatoes and onions then cover with cling film and put into the fridge for at least 30 minutes; this will enable the flavours to develop.
- Remove from the fridge 15 minutes before serving to come to room temperature.
- At the last minute add the chopped parsley and give it a stir.
- Serve with fresh crusty bread or as a side to grilled chicken, fish or a nice steak.
