Chinese Salt and Pepper Chips
Salt and pepper chips or salt and chilli chips are easy to make at home. Peppery, spicy and are certainly a taste sensation!

You use a cheeky little hack and do as I did, just use oven chips - I like the nice fat Maris piper chips from ALDI, although Tesco's also sell them, they are exactly the same (probably made at the same factory) but they are more expensive.
Ingredients in this recipe
- 200g nice fat oven chips
- 2 teaspoons of spice mix - see recipe below
- ½ red pepper - deseeded and cut into small dice
- ½ green pepper - deseeded and cut into small dice
- 1-2 red chillies - seeds removed and finely chopped
- 2 spring onions - thinly sliced
Spice mix for Salt and Pepper Chips
- 1 tablespoon Chinese five-spice powder
- 1 teaspoon of sea salt flakes
- Good pinch chilli flakes
- 1 teaspoon sugar
- a pinch of white pepper
Method
Preheat your oven 220C/180C fan) 400F or Gas mark 6Add the spice ingredients into a small bowl and give it a mix together. This will make enough spice mix for another day - just store it in an airtight container.
Cook the oven chips as per packet instructions (unless you're making your own chips as shown below).
Meanwhile heat up a little oil and add the onions, peppers and chillies and cook until softened.
Don't rush this or the onions will taste raw, you want them softened but not coloured, about 15-20 minutes.
Add the spring onions and cook for another minute or so and then stir in just 2 teaspoons of the spice mix, your kitchen will smell AMAZING!
You can add a little more once you've had a taste.
Tune the heat off and leave the peppers and onion mixture in the frying pan.
When the chips are pretty much done, reheat the pepper mixture and tip the lot onto the chips, gently mix them together and serve immediately while they're still piping hot.
How to make chilli chips in the oven
If you want to make the chips from scratch it really couldn't be simpler. You will need a metal, non-stick baking tray as they get hot quickly and your chips will be crispy.
Kitchen tongs are good for laying out and turning your chips.
It is important to preheat your oven first.
Preheat your oven to 220C/180C fan) 400F or Gas mark 6
Use a floury variety of potatoes such as Maris Piper or King Edward.
Cut the potatoes into nice fat chips and place them into a bowl. Drizzle with 1-2 tablespoons of vegetable oil. Mix together thoroughly so all the chips are evenly coated in the oil.
Spread the chips out on a large baking tray. Make sure the chips are well spread out and not touching.
Put them into the oven to cook for 10 minutes.
After 10 minutes, turn each chip and put them back into the oven. Check on them and turn again putting them back into the oven to cook for a further 5-10 minutes.
Try one is the best way of knowing if they are done; just don’t burn your mouth as they will be hot!
