Dirty fries are most certainly a taste sensation!
Dirty chips or fully loaded chips - whatever you fancy calling them, are probably one of the best easy-to-make snacks ever.
What are dirty fries?
Usually, they are loaded with gravy, bacon, peppers and spring onions but I didn't fancy the gravy part, so instead, I added sour cream.
I know a while back Marks and Spencer introduced their Spirit of Summer Dirty Fries which were silly expensive for what they were, and looked nothing in the slightest like the picture on the packaging!
What are loaded chips?
Perfect with a cold beer or a glass of wine after a busy week. Spiced chips topped with bacon, peppers, spring onions, jalapeño peppers, cheese and a little sour cream; what's not to like?
At first glance, you may think they must be fattening, but actually, they're healthier than you think.
Oven chips contain less fat than fried chips plus a few fries will go a long way since the dish contains a lot of bell peppers which bulk it up without adding calories.
However, if you're looking to cut the calories, even more, you could also use reduced-fat cheese. Even if you left out the bacon you'd still have a nice comforting bowl of deliciousness.
I used McCain oven fries, but not the 'quick cook' ones, as in my opinion, they are just awful, they don't seem to crisp up and end up soggy.
What to serve them with
Personally, I say nothing, as they are plenty filling on their own. But if you're really hungry, pan-fried steak or chicken would be perfect.
Top Tips!
- Use scissors to cut the bacon, it's much easier than with a knife.
- If you don't eat meat you can always use veggie bacon.
- Jalapeño peppers - optional as not everyone likes them.
- You can add onions but you will need to cook them first to soften them to reduce the raw onion taste.
- I used McCain oven fries, but not the quick-cook fries ones, which in my opinion, are just awful, they don't seem to crisp up.
How to make dirty fries
Prepare the ingredients.
Spread the oven fries on a non-stick baking tray and sprinkle with cajun or paprika seasoning.
Once cooked remove from the oven and transfer to an ovenproof baking dish.
Top with the peppers.
Add the cheese and return to the oven for 3-5 minutes.
When the cheese has melted add the cooked bacon and return to the oven for another 3 minutes to heat through.
Remove from the oven and add the spring onions.
Followed by the jalapenos and sour cream, then prepare to dive in!

Dirty Fries Recipe
Ingredients
- 2 portions of skinny oven chips
- Cajun seasoning (or paprika)
- smoked streaky bacon - snipped using scissors
- ½ red pepper - chopped into small dice
- ½ green pepper - chopped into small dice
- a large handful of grated Cheddar cheese
- 3 spring onions - thinly sliced
- Jalapeño peppers - taken from a jar and drained on kitchen paper
- sour cream
Instructions
- Preheat your oven as per the packet instructions on the packaging.
- Meanwhile, cook the bacon until it's nice and crispy, then remove and set aside on kitchen paper.
- Spread the fries out on a non-stick baking tray and sprinkle over a little cajun seasoning and cook as per the packet instructions.
- When the fries are cooked transfer them to an ovenproof baking dish and top them with the peppers and grated cheese.
- Return to the oven for about 3-5 minutes until the cheese has melted.
- Now add the cooked bacon and return to the oven for a further 3 minutes.
- Remove from the oven and top with a few jalapeño peppers and spring onions.
- Add a few dobs of sour cream and prepare to dive in!
