Leek Carrot and Pearl Barley Soup

Leek Carrot and Pearl Barley Soup is not only nutritious but it's also delicious! Adding pearl barley to soups and stews adds texture and thickens since it doubles in size once cooked; plus it will also help to keep you feeling fuller for longer.

You can add pearl barley to a soup maker and it works as long as you select chunky soup, otherwise, it will break up when the machine starts whizzing the soup up!

Pearl barley is whole grain barley that has been processed to remove its fibrous outer hull and polished to remove some or all of the bran layer.

I recently posted a review on the Froothie Evolve Power Blender with Cook and Steam although at the time I'd only used the smooth soup function and realised I hadn't actually tried using 'Chunky Soup'.

I've had a dedicated soup maker in the past and although it was great it wasn't good at chunky soup; in fact, I'd go as far as saying the soup pretty much turned out the same as if I'd used smooth soup setting 😬

So if you're wondering can you put barley into a soup maker then yes you can, but it does depend on the quality of the soup maker you have as to whether or not it can handle it without it breaking up.

The Froothie Evolve has got chunky soup sorted! Nope, it didn't even break up the pearly barley.

All ingredients remained the same size as I'd sliced or chopped them to.

Leek Carrot and Pearl Barley Soup - serves 4

Ingredients:

10g butter 2 teaspoons olive oil
3 leeks - trimmed, washed, halved lengthwise and thinly sliced
1 medium onion - peeled and diced
2 large carrots - peeled and sliced into 5mm slices
1 ½ Knorr vegetable stock cubes
6 tablespoons cooked pearl barley - rinsed and drained
½ teaspoon white pepper
approx 900ml water

Method:

Heat the butter and oil in a large frying pan and cook the leeks, onion, and carrots until softened but not coloured. Don't fuss that the carrots aren't softened because they will cook when you make the soup. Just be sure to stir so nothing burns.

Once that's done add to the Froothie Evolve cooking jug and add the cooked pearl barley and stock cubes to the jug along with approx 900ml water (can be cold) don't go past the soup max line of 1400ml

Soup ingredients in the Froothie Evolve Glass Jug

Put the jug onto the Froothie Evolve base making sure it's locked into place and put the lid on.

Press 'On/off' and you'll see smooth soup is flashing - press the Menu button once to move across so that 'Chunky Soup' is flashing. Now press 'On/off' to start. Your soup will be ready in 30 minutes.

*If you don't have a Froothie Evolve or a dedicated soup maker you can, of course, cook this in a large saucepan on the stovetop. Bring to the boil then turn to a simmer stirring now and then*
