Much excitement here in my kitchen because a shiny new pan from SCANPAN arrived!
I was so eager to use it so straightaway I made Spatchcock Chicken.

This SCANPAN called The Square and is from their latest TechnIQ series of commercial-grade non-stick cookware with new technology.
SCANPAN says this is a surface that surpasses all previous ones when it comes to hardness, and therefore strength and durability, while still retaining a perfect food-release and being exceptionally easy to clean.
Well, to be honest, I truly wouldn't have thought they could make a better cooking surface than already on their original SCANPAN which I reviewed ages ago. That pan does a brilliant job with everything I cook in it, especially Crispy Roast Potatoes.
More than 4 years on I still regularly use that pan more than any other but I must say the new Stratanium+ coating is seriously impressive.
Before it arrived I couldn't wait to see what all the fuss was about and why they say this Stratanium+ commercial grade non-stick coating is even better than my trusty original SCANPAN.
Well let me tell you it is stunning; yes, stunning and yes I know I do get excitable about nice kitchen stuff. But that aside you can instantly see the quality and shimmering coating that makes this pan stand out from the crowd 😍
I cooked a spatchcock chicken (be impressed, I prepared it myself). I learnt how to do this ages ago from watching a YouTube video 😉 It's really easy and once you've done it once, it's a doddle next time.
You will need poultry shears or of course, you could ask your butcher to do it for you.
Anyway, the SCANPAN TechnIQ with Stratanium+ coating doesn't require any oil and heats up very quickly. It can be used on the stovetop or in the oven.
My prepared chicken went into the oven at 200c for about 45 minutes. A spatchcock chicken cooks quicker because it's flat compared to a regular whole chicken.
I drizzled the chicken with a tiny bit of olive oil and sprinkled over dried oregano and sweet pepper flakes; this is a link to the ones I used (but please don't buy these at the price that want on that Amazon link because I got mine from Sainsbury's and paid £2.50).
The end result was moist perfectly cooked chicken and no sticking to the pan.
Once cooled the SCANPAN was ridiculously easy to clean in nice hot sudsy water, rinse then dry thoroughly before storing.
Although it can go in a dishwasher as with any good pan it's not ideal to do so. I certainly won't be putting mine into the dishwasher and in any case, I can't see why you would want to because it really is so easy to clean by hand.
I have the square 28x28cm size Scanpan which is perfect for us.
The chicken I cooked was 1.8kg and kind of looked lost in the pan but if you need bigger then it is also available in a larger 33x33cm size. It has nice deep sides so you can roast or bake loads.
Since receiving the new SCANPAN I've cooked quite a few things and I can honestly say I'm really impressed with it.
It heats up quickly and holds the heat so it's perfect for searing meats before popping into the oven to cook.
My Top Tip
I will say if you cook something like a lasagne then cook at a lower temperature because the SCANPAN really holds heat and the bottom of mine was a little too done for my liking.
Anyway now I've discovered that I know in future I can cook on a lower heat which of course saves money too.
At £179 it may seem expensive to buy but believe me, the quality is outstanding but don't forget I've had and used my original SCANPAN for more than 4 years.
Although the surface is dull compared to how it was when brand new it's still perfectly good and it's still non-stick so actually it makes sense to pay a bit more rather than have a whole bunch of pans that don't last long.

Spatchcock Chicken
Ingredients
- 1 x 1.8kg whole chicken
- Olive oil
- Dried oregano
- Sweet pepper flakes
Instructions
- Remove the chicken from the fridge for 20 minutes before cooking so that it can come to room temperature.
- Now start by preparing your chicken spatchcock style.
- Lay the chicken in a roasting dish and rub it all over with a little olive oil.
- Sprinkle with oregano and sweet pepper flakes.
- Cook uncovered for about 45 minutes.
- Test to be sure the chicken is cooked through and pop it back in for another 5 minutes by which time it should be perfectly cooked.
