Chilli Honey Chicken

Chilli Honey Chicken is so very easy to make - a delicious and simple marinade can transform an ordinary piece of chicken into something extra special.

Ingredients in this recipe

  • chicken breast fillets
  • olive oil
  • lemon - zest and juice
  • garlic 
  • chilli powder
  • smoked paprika
  • red pepper flakes
  • runny honey
  • black pepper and sea salt

Chilli Honey Chicken Marinade

No real recipe for this - it's so easy. In a small bowl, mix together 2 tablespoons olive oil, a good pinch of red chilli flakes, a squeeze of lemon and a good pinch of chilli powder.

Don't leave the chicken in the marinade for any longer than 30 minutes or the lemon will start to break the chicken down and make it tough.

Chilli Honey and Lemon Marinade

Serve with some simple pan-fried veggies, courgette (zucchini) peppers and onions.

Chilli Honey Chicken

Delicious and easy chilli honey chicken recipe.

Ingredients

  • 2 chicken breast fillets
  • 2 tbsp olive oil
  • 1 lemon - zest and juice
  • 1 garlic clove - skin removed and very finely chopped
  • 1 tbsp chilli powder
  • 1 tbsp smoked paprika
  • 2 tbsp red pepper flakes
  • 3 tbsp runny honey
  • a pinch of black pepper and sea salt

Instructions

  1. Mix all of the marinade ingredients together in a shallow bowl that's big enough to take the chicken.
  2. Now slice each chicken fillets into 2 or 4 whatever takes your fancy, then place between two sheets of cling film (do just two at a time) and bash with something suitably bashable - don't go too mad or you'll tear the chicken to shreds.
  3. Bash the chicken a few times until each piece is thinner.
  4. Put the chicken into the marinade, stir to coat well and leave covered in the fridge for 30 minutes if you can.
  5. Remove from the fridge 10 minutes before you start to cook.
  6. No need to add oil as it's already in the marinade. Heat up a frying pan and add the chicken.
  7. Because you made the fillets thinner, it will only take a couple of minutes to cook - turn after 2 minutes or so.
