Bubble and Squeak Recipe
Turn ordinary bubble and squeak into a posh version by adding pancetta and spinach, then top with a fried egg.

I love bubble and squeak but since it requires leftover potatoes and greens we hardly ever have it, why?
Because we are quite greedy people we hardly have any leftovers, but if you do happen to have any cooked potatoes then this is a great way to use them up. or you could always cook more than you actually need if you wanted to make this.
A more traditional bubble and squeak recipe where ingredients are leftover boiled potatoes and cooked cabbage, but I've gone all fancy and come up with this.😊
There's no real recipe for this one as it's that easy!
Ingredients
- pancetta or bacon lardons
- leftover cooked potatoes
- a teaspoon or two of smoked paprika
- a small handful of spinach
- a pinch of black pepper to season
- 1 egg
Just throw the pancetta or bacon into a pan, there's no need to add any oil, cook until crispy then remove and set aside.
Add the cooked potatoes to the pan along with a teaspoon or two of smoked paprika and cook until heated through.
Add the bacon back in (along with a handful of spinach for good health) 😊 and cook until it wilts, which will take seconds.
Season with black pepper and serve straight away with a nice fried egg.
Equipment
You can swap some ingredients to suit your taste
- pancetta or bacon for chorizo or sausage
- or you could use fake bacon (meat-free)
- egg for grated cheese
- spinach for thinly sliced cabbage greens - although they would take a few minutes to cook
- or swap the spinach for cooked Brussels sprouts or kale
- you could even mash everything together and shape it into bubble and squeak cakes (then fry to brown)
