As you probably know I'm not usually a one for baking cakes; why? Simply because I can't do baking, I am useless at it and so I need all the help I can get.

But with that said I did once excel myself in making Dulce de Leche Filled Muffins ðŸ˜‰

Of course, a good muffin/cupcake tin will ensure your muffins cook evenly and this Hard Anodised Cupcake Tin from Stellar Cookware is the very thing. It doesn't warp like some cheaper muffins tins will.

This tin is a sturdy and professional piece of bakeware (and by the way it makes a good job of Yorkshire puddings too).

I'm really pleased with the results which means me and this Stellar cupcake tin are now best buddies in the kitchen.

The tin holds twelve muffins but my recipe only made ten.

How to Stop Chocolate Chips Sinking

When adding chocolate chips or raisins and the like, to any cake mix add them to the flour and mix to coat before adding the wet ingredients; this stops them sinking to the bottom of your muffins - how very marvellous!

Chocolate Chip Muffins

Chocolate Chip Muffins

Chocolate Chip Muffins are quick and very easy to make, and yummy too!
Prep time: 5 MinCook time: 20 MinTotal time: 25 Min

Ingredients

  • 250g plain flour
  • 2 teaspoons baking powder
  • ½ teaspoon bicarbonate soda
  • 2 tablespoons best quality cocoa powder
  • 175g caster sugar
  • 150g chocolate chips - plus a small handful more for sprinkling later
  • 250ml milk
  • 90ml vegetable oil
  • 1 large egg
  • 1 teaspoon real vanilla extract

Instructions

Preheat the oven to 200C/400F/Gas6
  1. Fill a 12-bun muffin tray with paper cases.
  2. Weigh out the dry ingredients into a large bowl, except for the chocolate chips.
  3. In a small dish add a small spoonful of flour, and throw in the 150g of chocolate chips. 
  4. Give them a mix around to coat in the flour, this will stop them from sinking to the bottom of your muffins. 
  5. Pour all the liquid ingredients into a measuring jug.
  6. Mix both together, you will have a runny batter. Now spoon into the muffin cases.
  7. Sprinkle more chocolate chips on top then cook for 20 minutes or until the muffins are risen and springy.
