Easy Breakfast - Recipe Idea

The perfect lazy day breakfast of scrambled eggs on toast topped with crispy bacon and roasted tomatoes. Serve with a nice cup of coffee (tea for me please) and after eating this you'll be all set and ready to do absolutely nothing for the rest of your lazy day.

Perfect Scrambled Eggs and Roasted Vine Tomatoes

The perfect lazy day breakfast of scrambled eggs on toast topped with crispy bacon and roasted tomatoes. Serve with a nice cup of coffee (tea for me please) and after eating this you'll be all set and ready to do absolutely nothing for the rest of your lazy day.
prep time: 5 minscook time: 20 minstotal time: 25 mins

ingredients:

Serves 1; just double everything to make 2 servings
2 large free range eggs
a splash of whole milk
a knob of butter
salt and black pepper

instructions

Break the eggs into a bowl and lightly whisk the eggs with the milk and a pinch of salt together until everything is mixed together nicely.

Heat a small non-stick saucepan for a minute, then add the butter and let it melt.

Be sure the butter doesn't start to brown or your eggs will discolour.  Using medium heat, pour in the egg mixture then stir with a wooden spoon.

Keep lifting and folding the eggs from the bottom of the pan until the eggs are softly set and slightly runny in places, then remove from the heat and leave for a few seconds to finish cooking. Serve immediately.

To roast baby vine tomatoes:
Pre-heat your oven to 200c/400F or Gas 6

Drizzle your tomatoes with olive oil and pop them onto a non-stick shallow baking tray.  Let them roast in the oven for about 20 minutes - keep an eye on them because if they cook too much they will turn to mush.
