Oven Baked Chicken Melt

Now if you're looking for diet food you have not landed on the right page but if you're distracted by the mention of cheese then you're just like me. I can not live without cheese in my life!

To make things easier sometimes I use those disposable foil baking trays which can actually be washed and reused a couple of times.

In case you're wondering foil trays can be recycled but ONLY if they are clean, so give it a wash before putting it in your recycling bin.

You can also prepare this a few hours or so in advance - just cover with cling film, pop it in the fridge and it'll be ready to bake later on. You could come back from work and bung it in the oven while you're having a quick shower.

Easy Leftovers Dinner Idea

Most people have an oven, and oven-baked dishes are a great way of using up leftovers. 

Of course, since you don't have to follow my recipe at all, just add whatever you fancy as a topping for the chicken and the cooking time should be roughly the same.

But with that said, all ovens are different, so I'll leave that for you to decide when the chicken is cooked through and everything is piping hot.

Recipe Top Tips!

Be sure to bash your chicken fillets as mentioned in the recipe so they are flatter otherwise they'll take much longer to cook.

Always cover with foil and remove in the last 5 or 10 minutes so the cheese can become lightly golden. 

Foil trays can be recycled but only if they are clean, so rinse or wipe off any crumbs or food residue from foil trays. To rinse just dunk the tray in the washing up water - no need to run the tap.
