Chicken Melt
Chicken with a pizza style topping is so easy to do and a great way to use up odd bits of food in the fridge!

I had both Mozzarella and Red Leicester cheese but not enough to make anything proper with. That along with an odd green chilli a few rashers of bacon and a red bell pepper.
Onions, you should have anyway says I, so armed with these ingredients the pizza topped chicken was created! Bash the chicken fillets between cling film until they're a bit thinner but not completely flattened!
Put the chicken side by side into the dish and top with the cheeses, onion slices, bell pepper and chilli and fried bacon bits.
Pop into the oven for about 25 to 30 minutes - just check the chicken is cooked through and serve immediately with some nice salad and a bowl of potato wedges for good measure - homemade of course.

Chicken Melt - Pizza Topping
Ingredients
- a few rashers of back bacon - cut into small pieces and fried nice and crispy
- 2 skinless chicken fillets
- 1 red onion - very thinly sliced
- 1 red bell pepper - very thinly sliced
- 1 green chilli - deseeded and very thinly sliced
- a handful of each of the following - and, or of course whatever else you fancy or already have:
- Red Leicester cheese
- Grated Mozzarella
Instructions
- Get yourself a suitable sized ovenproof dish - on the shallow side. Bash the chicken fillets between cling film until they're a bit thinner but not flattened!
