Parmesan Chicken Recipe
Crispy, crunchy, cheesy, peppery and totally delicious!
Chicken fillets covered in a Parmesan and paprika crumb and simply shallow fried.
Easy to do and far, far better than shop-bought coated chicken.
Ingredients in this recipe
- skinless chicken breast fillets
- flour
- salt
- freshly ground black pepper
- egg
- panko crumbs
- paprika
- parmesan cheese
- unsalted butter
- olive oil
Equipment
You will need a large non-stick frying pan.
Top Tip!
If you don't have Panko crumbs although they can be found in any good supermarket. You can use stale
bread whizzed up in a food processor.
If you don't have stale bread just leave a couple of slices out of the packaging and it will turn dry after about 30 minutes to an hour.

Crispy Parmesan Chicken Recipe
Crispy panko and parmesan crumbed chicken - easy and delicious.

Ingredients
- 2 boneless skinless chicken breasts
- 5 tablespoons of flour
- a good pinch of salt
- 1 teaspoon of freshly ground black pepper
- 1 large egg - lightly beaten
- 2 handfuls of panko crumbs
- 1 tablespoon of paprika
- a good handful of freshly grated Parmesan cheese
- 10g unsalted butter
- 1 tablespoon of olive oil
Instructions
- Slice each fillet in half horizontally so one fillet becomes two thin fillets.
- Get 3 plates lined up in a row.
- Mix together the flour, salt and pepper on the first plate.
- Lightly beat the egg and pour it onto the second plate.
- On the third plate, add the panko crumbs, paprika and parmesan.
- Do one fillet at a time and press the chicken into the flour and coat both sides.
- Dip each side of the chicken into the egg mixture.
- Now coat both sides with the panko crumbs, cheese and paprika lightly pressing them to coat all over.
- In a large frying pan - big enough to hold all 4 pieces of chicken and fry over medium-low heat for about 3 minutes on each side, until properly cooked through.

Looking great Jan! I often do this, and sometimes I turn it into Chicken Parmesa by adding a delicious tomato sauce and some Mozzarella cheese. Layered and baked it is oh so scrummy!
