How to make fried spaghetti noodles
Cooked too much spaghetti and wondering what to do with it? I do it all the time.

Ingredients in fried spaghetti
- leftover cooked spaghetti
- vegetable oil
- unsalted butter
- eggs - free-range, of course
- mature cheddar
- freshly ground black pepper
- red pepper flakes
- your favourite hot sauce - we like Sriracha
- flat-leaf parsley
Fried spaghetti
Start by gathering your ingredients.
Get a large frying pan and add the oil and butter. Once melted and are nice and hot, add the spaghetti and give it a good stir.
Season with pepper and stir for a few minutes more to heat through it.
Add the beaten egg, stir it, then add the grated cheese. Let it cook for a minute or two.
Sprinkle over the pepper flakes and the hot sauce.
Mix everything together.
Serve while piping hot with the chopped parsley over the top.
Other ingredients could include
- snipped chives
- pancetta
- cooked bacon
- ham
- sun-dried tomatoes
- spring onions/scallions
- shredded cooked chicken
- jalapeño peppers
- any cheese - but I suggest not using a blue cheese

- 2 eggs - lightly beaten
- 80g grated mature cheddar - or whatever cheese you either have in the fridge or fancy
- freshly ground black pepper
- 2 teaspoons red pepper flakes - or to your taste
- a splash of your favourite hot sauce - we like Sriracha
- flat-leaf parsley - chopped
Instructions
- Get a large frying pan and add the oil and butter. Once melted and are nice and hot, add the spaghetti and give it a good stir.
- Season with pepper and stir for a few minutes more to heat through it.
- Now add the beaten egg, stir it, then add the grated cheese.
- Let it cook for a minute or two, mixing everything together.
- Sprinkle over the pepper flakes and the hot sauce.
- Serve while piping hot with the chopped parsley over the top.
